About the Recipe
3/4 cup Pureed Pumpkin
1/2 Banana (ripe, mashed)
2 2/3 tbsps Canned Coconut Milk
2 2/3 tbsps Unsweetened Shredded Coconut (plus extra for topping)
1/4 tsp Cinnamon
2 tbsps Blueberries
1 tsp Maple Syrup
In a medium pot, stir together pureed pumpkin, banana, coconut milk, shredded coconut, and cinnamon. Cook on medium heat for five minutes, until cooked through and thickened.
Serve in bowls and top with blueberries, maple syrup, and shredded coconut. Enjoy!
